Crispy, Perfect Latkes, Every Time

I love the day our family comes together to celebrate Hanukkah, eat latkes, sing the Dreidel song, and retell the story of the Maccabee Revolt and the Miracle of the Oil. We don’t just serve latkes, we have a “Latke Throw-Down”! Each family makes a unique latke recipe with special savory toppings; all hoping theirs is the BEST!
Here is my favorite recipe. Enjoy!
Ingredients:
1 medium yellow onion
3 large Yukon Gold potatoes, about 2 ½ pounds
1 teaspoon Kosher Salt
3 tbsp. Matzo Meal
2 tbsp finely chopped parsley
1 fresh lemon squeezed
2 large eggs, lightly beaten
3 cloves of pressed garlic
Avocado oil for frying
Directions:
Lightly beat 2 eggs in a bowl
Mix in 3 tbsp Matzo Meal
2 tbsp finely chopped parsley
Add in 3 cloves of pressed garlic
And 1 teaspoon of Kosher Salt – Stir ingredients
Peel and grate potatoes into the bowl
Peel and grate onion into the bowl
Immediately add lemon juice. Stir all together.
Pour enough oil into a skillet that reaches a depth of ¼ inch
Heat oil over medium-high heat. Form mixture into balls using a ¼ cup of the mixture, place them in the hot oil. Flatten each ball gently with a spatula.
Fry, 4 minutes on each side until golden brown, and crisp.
Serve the latkes hot, topped with a dollop of sour cream and horseradish.
(1/2 cup sour cream mixed with 2 teaspoons of horseradish).
